Mesophilic Cultures are used for crafting cheeses such as Gouda, Cheddar, Muenster, Blue Cheese, Colby, Monterey Jack and other cheeses that thrive in a mid-temperature environment. The culture itself is made of lactose, lactococcus lactis subsp. cremoris, and lactococcus lactis subsp. lactis.
